I would like to create menus like those on some commercially produced DVDs.
Firstly when I have more than one project (or rendered movie files) on the DVD I would like to be able to produce a menu where there is a selection such as -
Play all
Play 1st video
Play 2nd video
Where if the 1st video is selected the menu is display once that video finishes instead of the second video automatically playing once the first one concludes.
Secondly I would like to create 'animated' menus which show small video clips within the menu instead of just stills.
I guess that professional video authoring software would be required but does anyone know which ones have these features?

Video Studio 10+ can do some of what you want, namely the animated menus. That version, and previous versions, also allow you to select between 'return to menu' or 'play next clip' when you select and play one clip. But for the rest, as Steve says, DVD Workshop is required for the more sophisticated aspects you mention. Or, as you yourself realise, other more sophisticated authoring programs such as Adobe's Encore. But be warned, particularly with the latter, the learning curve is very steep!
