I'd like to find out which is better for my uses...
I want to be able to edit video clips (stitch or cut) then create a full featured DVD with all the interactive menus and chaptering. Plus designing my own templates.

You'd better download and install both demos to check out the features. Also go to the Ulead website and read the features themselves.
VideoStudio is primarily an editor with some authoring capabilities.
DVD Movie Factory is an authoring program with limited editing capabilities. You can modify the templates to a certain degree, but it may not contain all the flexibility you are looking for.
You may want to also look at DVD Workshop Express and the Full 2 for more full-featured menu editing capabilities.
Depending on if you also want to do more with editing than simple cut and join, say transitions, titles etc. may also influence your decision. Also what your capture device and source files you wish to use to create the DVDs may have an influence on the products you select as well.

You purchase at your own risk is all i can say!
DWS2 does not give you anything close to the video editing capabilities of VideoStudio 8. It has some basic "cuts" for editing, but you don't get the video editing features of VS8. Where DWS2 is much better is in its Authoring features...
