I've noticed that when I trim certain clips or split them up the fade in/out option is greyed out and unclickable. Is this some kind of limitation of V8 or am I doing something wrong? I can use the fade feature on other clips...

do you mean the fade in fade out icons up the left side of the preview screen 
- these do not affect the video - they are for the sound - if your clip has no sound then these icons will be greyed out. 
If you want to fade the video then you should be using the 'crossfade' or 'fade to black' transitions (not forgeting to insert a black block to fade to) available in the F/X library pane under transitions.
