I don't believe widescreen menus are supported in DVD Workshop 2.0. Is there a way around this or will this be an added feature in newer versions/service packs?
I also noticed on some high end DVD's the ability to detect wide/standard menus through the DVD player settings. This feature seems to be reserved for really high end DVD creation. Is this a possibility in future versions as well.

You are right, it is currently not supported, This is also discussed in some other posts of this thread. In 2004 I got the following answer from ULEAD support:
We will intergrate this feature to future version(s) of DVD Workshop 2
Meanwhile I dont belief that anymore. It seems more likely that it will be in DWS 3 or so. Movie factory 4 allready has it.
Since 2004 I use the following workaround:

- create 4:3 menus
create dvd folder
adjust with ifoedit or pgcedit
burn folder to disk
