How to "blur out" (i.e. make it unclear so that it becomes unreadable) an address in a document I want to show in a video? I assume it would be obtained by an overlay file, but don't know exactly how. Anyone know any tutorials on how to do this?

Is this an image of the document or a video?
If an image just load it into an image editor (photoshop, photoimpact, paint shop pro etc.), select a region around the area to be blurred and use one of the programs blur filters. In PhotoImpact I use the Mosaic Blur. The region selection will limit the filter application to just that area. With a large enough blur it'll fade into oblivion. Save out the changed document and use it in your video.
If a video things get tougher. This is a project for Video Paint, and depending on the amount of motion in the clip it can be very easy or very hard. The procedure is basically the same as in an image editor; applying a blur filter to the specific region you want obscured. The problem is that in a video you're dealing with hundreds of images. The Video Paint MACRO mode helps, but it can be a tedious job.
Personally I'd just use an image and keep it as simple as possible.
