I have noticed when doing comparisons of settings in the AI Resize operation that when the "GPU acceleration" box is checked (as recommended) the process is much slower than if I leave it unchecked. Is there an explanation for this? The results seem to be the same.

Hardware and setup. Technically how they take advantage of the GPU also plays in but I imagine that's handled by the AI engine they're using for execution. For me the GPU Acceleration is huge. Cutting down the time nearly by half.
On a test image that I cropped and then resized by 400% - GPU - 43 seconds CPU: 1 minute and 36 seconds.
My GPU is more powerful than my CPU in both graphics and AI processing so it works faster. It's still an old baseline laptop so it's not stellar performance but it gets the job done. AI Denoise is even more dramatic speed-wise. Though I have as of yet found zero need for the AI functions.

Thanks. I guess that i9 CPU is just faster than the GPU.
My system hangs when I try to use AI denoise (after installing the Radeon card -- it did not do that before). I just use the other denoise functions if needed.
